In my studies of the time and peoples, I surmised that they were also farmers. It is what they did best. they also came from a warmer part of Italy and more used to a warmer climate. I noticed that the northern Italians tended to go north and the ones from southern Italy stayed in the southern states. Makes sense to me. I would do the same.
